From the tastes of his childhood, he remembers the memories of his grand-mother's vegetable garden and her delicious dishes cooked with love, which confirms his actual conviction, that cooking is all about feelings. But also, of course, work and willingness. Let's say it: goodness, natural, local and proximity.
His philosophy ?
A clear cuisine made of 3-4 flavours maximum enhancing the product with a special attention to the way of cooking and the textures. After his studies at the hotel and catering school of Strasbourg with different options such as “pâtisserie” and catering , Aziz worked in excellent restaurants where he built his knowledge.
He wishes his cuisine to be cheeky and in some ways disturbing too. Indeed, the Chef bans simplicity and concentrates on the contrasts and the blends of flavours and textures. At the whim of seasons, Aziz wants his cuisine to be relevant but impertinent at the same time. The dishes are sober, but with incredible techniques and once the surprise is gone, the arose your taste buds.
Really dedicated, he doesn't hesitate and accomplishes his plans and dreams. Independant nad honest, he makes Saint-Augustin's saying his motto: “We need to live our passion rather than dying of having lost it”. He just celebrated L'Annexe's 3 ard birthday, that he created with his spouse and forever accomplice Rika.
A concept of French 'bistronomy'. Rika, the host of the house, French-khmer who came back on her parents' land to offer her guests in a happy and friendly atmosphere, a contemporary cuisine full of subtlety and creativeness. Her great experience in hospitality and restaurant industry, but also the extensive knowledge of her husband's cuisine, allows her to advise you. At lunchtime, the menu varies greatly according to the seasons and the mood of the Chef. However in the evenings, the “bistronomy” is on honnor to please the finest gourmets.
